Lebanese Carrot and Orange Salad

Oranges and onions are a popular combination in many Middle Eastern countries.

Serves: 6

Ingredients

  • 2  cups  shredded carrots
  • 2  large oranges, peeled and sectioned, then cut into pieces
  • 12 cup onion, cut into thin slices
  • 13 cup raisins
  • 1 12 tablespoons  vegetable oil
  • 1 12 tablespoons lemon juice
  • 1  tablespoon water

Directions

  1. In a medium bowl, combine carrots, oranges and raisins.
  2. Toss to combine.
  3. In a small bowl, combine remaining ingredients.
  4. Spoon over carrot mixture. Mix well.
  5. Chill several hours or overnight.
  6. Mix before serving.
  7. Note: preparation time does not include chilling time.
