Ana Hayter and Tori May are typical of the new breed of Saffronites: the business partners who run the Waffle + Co food trucks launched their own café last autumn and plan to offer cocktail and DJ nights to pep up the nightlife of this well-heeled town named after the world’s most expensive spice.

“It’s probably the only thing here that needs a bit of livening up,” says Hayter, who relocated from Streatham, southwest London, to the nearby village of Great Chesterford six years ago after reading about the place in The Sunday Times Best Places to Live. “Otherwise, there’s so much to do for all ages and everyone is so friendly and helpful.”
