Now that summer is fully upon us, I hope that you are availing yourself to everything Greystone has to offer. We have all patiently waited for the monsoon season to subside so that we can enjoy our club. If you have not noticed already, there have been some terrific improvements to both the adult and family pool. Also, with new Pool Grill equipment arriving in the next few days, you will soon be enjoying an expanded menu at the pool which should satisfy any appetite. While enhancements have been taking place at the pool, other club areas are “dressed� and ready to go. Both golf courses are in terrific condition thanks to Jason Miller and his staff. Many of you enjoyed the courses with the completion of a fantastic Member-Guest during which Greystone hosted 128 teams at the Founders and Legacy Course. Congratulations to Wayne Graves & his guest Glen Hosey on winning the tournament. Recognition would be incomplete without noting the service and dedication of our entire golf and food & beverage staff. Thanks to the Greystone Team for continuing to make this the premier Member-Guest in the Southeast. For our tennis enthusiasts, I am sure you have noticed renovations in the Tennis Clubhouse including new carpet and painting. Speaking of the Clubhouse, major changes are underway with the renovation of the Founders lower level. At this writing, the new fitness facility is anticipated to open sometime in August. If you have not been by to take a look, it is shaping up to be a terrific facility. Stay tuned for an announcement of our Grand Opening of the new Fitness Center. As the Fitness Center races to completion, the plans are already in place for the start of our new restaurant and bar. The artist’s renderings are absolutely spectacular and I am confident our membership will love this venue. Anticipated opening will be in the March 2016 timeframe.

The venerable 19th Hole will no longer be available when Founders restaurant construction begins in early August. To minimize inconvenience, the club will utilize a larger beverage cart stationed at the turn which will include all of the usual items plus sandwiches and hot dogs. In addition, we now have the window open at the golf operations center to purchase drinks and snacks before or during rounds. Many of the improvements you see around the Club are due in part to a set of fresh, professional eyes. I would like to thank General Manager David Porter for his efforts in making Greystone even better. I also wanted to take a moment to update and thank you for continuing to refer and recruit new members to our club. Membership growth has outpaced any year in the recent past and fewer members are electing to leave the club. This certainly reflects a healthy state of growth in our membership which we hope will continue as we build our world class facilities and enhance the overall experience when you come to the club. As always, if you know of individuals interested in membership, please have them contact Membership Director Ashley Fuentes, afuentes@greystonecc.com or (205) 986-5146. Serve as a Greystone Ambassador and help integrate new and prospective members. Join us for the Ambassador Reception on July 22. Details on page 3. Dear Members, I hope you are having a great summer so far! We are making significant progress with staff development and many new initiatives for improvement. Overall, I am very proud of the staff for embracing of the new culture. You will see more excitement, knowledge and on the spot decision making to enhance your experience at Greystone. Hopefully, you are starting to see a shift toward our development.

Thank you to all the members who came out to Fun Friday and welcomed me to Greystone! I look forward to meeting those of you who could not make it. We just may need to do it again! We have implemented some exciting changes at the pool for the summer season! We have a new expanded menu, adult lounge in the family pool area to catch sporting events, new portable bars, soft serve ice cream, improved maintenance, water basketball, palm trees for a tropical atmosphere and much more. Please come enjoy the day. Over the month of July you will see new uniforms in each department. We are creating a more professional and synergized look for the staff. We will have clear standards for wearing and caring for the uniforms. The Fitness Center project is coming to fruition and scheduled to open in August. The space looks amazing. In the coming weeks we will be offering construction tours for those of you that are curious before the grand opening. The new restaurant design is complete and the final plans are being developed for pricing. Once a contract is in place for the restaurant, we will share the fully designed renderings with you. The timing for the demolition to begin is early August. We will create alternatives for the turn when the 19th Hole is out of service. Membership interest and growth continues. We are out pacing our budgeted membership numbers in new members and less resignations. Both are equally important to our plan. Some of our new initiatives include grass roots residential efforts and attracting retirees to the Birmingham area.

Our annual Fourth of July celebration is positioned to be one of the best yet. We have increased the seating, added another buffet, created additional activities for the kids, and hired a top notch band. There are many positive changes on the rise as we progress through the summer months. I hope you have an opportunity to enjoy all of what the club has to offer. As a reminder from last month’s article, our Staff Mission is “To Create Positive Memorable Experiences for Members and their Guests during Each Visit to the Club.” Our Staff Vision is “To develop all Members into Raving Fans!” I am looking forward to getting to know each you. MONEY BUNS Fried Honey Buns with Maple Bacon Ice Cream INGREDIENTS Dough: 2 tablespoon active dry yeast 1/3 cup, warm water 1 cup, whole milk, room temp 8 oz. unsalted softened butter 3 large eggs 1/3 cup honey 2 teaspoons kosher salt 1 teaspoon pure vanilla extract 5-6 cups, all-purpose flour Cinnamon sugar, pinch Icing: 2 cups, confectioners’ sugar ½ cup whole milk (approx.)

By Chef Daniel Mitchell The Iron Bowl has nothing on the competition that I witnessed on March 27 th in the kitchens at Greystone. With direction from Dave Porter, we put on the first annual Greystone Culinary Challenge. The staff did a fantastic job with plates ranging from southern sushi to scallops & hand-rolled pasta to dumplings, sous vide, pork belly, jicama slaw and everything in-between. Even though I may have seen a little more kitchen energy today than normal, I’m proud of the effort and passion this team brings to work day in and day out. The prizes they were seeking are a Greystone menu spot with their award-winning dish. The three finalists were Andrea Holder, Haley Johnson and Kelsie Bunt. Andrea prepared empanadas three ways with sriricha dipping sauce. Haley put out pork & beef dumplings with potato strings and Kelsie made an orange mascarpone cheesecake with chocolate flourless cake and raspberry sauce. You will definitely be tasting these dishes soon at the club. The overall winner was Rashad Holmes, first year student at UAB who has only been cooking for a short time, yet shows years of experience. His winning plate consisted of a fried homemade honey bun with vanilla glaze and bacon maple ice cream. This dessert is destined to be a Greystone signature item and will satisfy many members and guests for years to come.

MAPLE BACON ICE CREAM Ice cream: 3 large egg yolks ¼ cup, granulated sugar A pinch of kosher salt 1 cup, whole milk 1 cup, maple syrup 2 cups, heavy cream

The mixture should be thick enough to coat a spoon. Stir in maple syrup, transfer to a bowl & refrigerate until cold. Stir in heavy cream. Pour mixture into ice cream maker. Stir in bacon brittle (recipe below). Follow ice cream maker instructions.

Bacon Brittle: 1 tablespoon unsalted butter 3 strips, smoked bacon 1 cup granulated sugar ½ teaspoon baking soda PROCEDURE

Grease a sheet pan, set aside. Cook bacon strips in a skillet over medium heat until crisp. About 5 minutes per side. Transfer to a paper towel to drain. Finely chop bacon. In another sauce pan, melt sugar over medium heat, stirring constantly until color turns golden. Cook another 2 minutes until light amber color. Remove from heat & immediately stir in butter and bacon bits. Pour mixture on to greased sheet pan and let cool until set. This should take about 15 minutes. Smash the brittle into small pieces.

Ice Cream base: In a medium mixing bowl, whip together the yolks, sugar and salt until pale yellow in color. Transfer to a sauce pan and whisk in the milk over medium heat. Cook over med heat, constantly stirring until simmering.

Bacon Brittle:

YIELD: 1 quart

PROCEDURE In a medium mixing bowl, mix the yeast and water, let sit for 5 minutes until foamy, set aside. In an electric mixer combine the milk, butter, eggs, honey, salt & vanilla. Mix with wire whip on medium speed until thoroughly mixed. Add the yeast mixture and continue mixing for 1 minute. Switch the whip to the dough hook attachment, reduce speed to low and add four cups of flour. After the flour is combined, raise speed to medium and continue kneading. Then add remaining flour, ½ cup at a time, until dough releases from side of the bowl. Raise speed to medium high & knead for 10 mins. Turn dough out on a lightly floured surface and knead dough until very smooth. Transfer dough to a lightly oiled bowl, cover with plastic & set aside in a warm draft free spot until dough doubles in size. This should take about 1 hour. In a separate small mixing, mix the powdered sugar and milk until a thick icing is formed. Punch down dough on to a lightly floured surface & divide into 3 portions. Roll each portion into a ball. Roll out each ball into a 10”x13” rectangle & about ½ inch thick. Brush lightly with honey & lightly sprinkle with cinnamon sugar. Starting on 1 side, roll the dough into a log shape. Pinch along the seam to seal & cut into nine 1½” thick slices. Carefully put each slice into a 350 degree deep fryer for approximately 4 minutes, flipping halfway through. While still warm, sprinkle with cinnamon sugar and top with icing. Garnish with a scoop of maple bacon ice cream. YIELD: 9 SERVINGS

This event is held in memory of Lori Johnson and 13,000 other women who die each year of ovarian cancer. All proceeds from this event will be donated to the Norma Livingston Ovarian Cancer Foundation (NLOCF) for research. To date, NLOCF has donated over $1,000,000 to ovarian cancer research with a majority of those funds going to the Gynecologic Oncology Department at UAB.

Save the O’s is a celebration of ovarian cancer survivors and a way to honor the memory of the many women we have lost to this disease. Friends and families come together dressed in teal in honor and in memory of these courageous women for a fun walk/run and community event. This family friendly event will feature the race, a silent auction, live music, food, and a pool party after the race. See you on August 29 th.

We are having such an amazing summer! A little rainy, yes, but it has seemed to visit us more at night and that is ideal by this AquaGirl’s standards. 1) This May we reached 1,959 visits which made it the third busiest May for us ever. Your support of the pools showed, especially with the new Pool Grill menu & standards because our income actually grew by 18% making it the highest income for May EVER! Thank you for supporting your club! 2) We’ve registered 86 swimmers on the swim team & got our first mascot: “GARY!” I hope you’ve met him, the beloved new team member. 3) Let’s set an attendance record on July 4th! The Pools will be open from 10am6pm. Please feel free to bring your own lounge chair as we anticipate a large crowd. We’ll have DJ Chuck spinning beats, games, contests, and a poolside cookout from 12-3pm.

GO GREEN! GO GATORS! Head Coach Jenna Petrocchi and Assistant Coach Alan Parsons have been leading a very fun-filled summer swim team! It’s been so rewarding seeing all the 5 & 6 year olds learning all of the strokes and getting over their fears. Plus the older kids have been getting great workouts that are conditioning them for their primary sports like Lacrosse, Football, Tennis, Gymnastics, Soccer and Baseball.
