COOKING WITH MR DIX By Jonathan Dix

I am the food teacher at Dartford Science and Technology College. As an ex-chef I have a passion for teaching students how to learn about the provenance of food, the seasonality, the skills involved in making food and finally how to create amazing, well balanced nutritious dishes. When lockdown started at the end of March I was very conscious of trying to keep the students cooking. So I started a YouTube channel and Instagram account. The plan was to film some easy to do at home recipes having in mind that there were severe shortages of most things in the shops. Initially I also did a few Cook-a-long Live lessons via Instagram which were a great success. However going forward not everyone is available at the same time so decided to use Youtube as the main driver and Instagram more for information of what was coming up in the new videos.

So far the feedback has been amazing and I get daily emails from people who have watched the videos and cooked the dishes. I was recently on BBC South East Today talking about the channel as part of a news item about lockdown learning.

I currently have around 660 subscribers for both the Instagram and YouTube channels and I have had 10,000 channel views in 2 months. There are now 21 videos with dishes ranging from banana cake (a lockdown favourite!), old school orange rind cake to dinner party dishes such as tropical pavlova and chicken feuilletes. I now upload two videos a week – generally one sweet and one savoury. I often allow subscribers to vote using Instagram so will offer a choice of four things and they choose their favourite two! I plan to carry on with the channel even when lockdown is all over as I enjoy teaching and if I can teach a few people how to cook then it is worth doing.

DARTFORD GRAMMAR SCHOOL’S STUDENT PUBLICATION SHORTLISTED IN NATIONAL AWARDS FOR JOURNALISM

Produced by members of Dartford Grammar School’s Journalism Society, the school’s student publication DGSChapter has been shortlisted for the finals of the Shine School Media Awards, a national competition recognising excellence in student journalism. Written, edited and produced by a team of students, DGSChapter includes a wide variety of school-related issues and current affairs articles and aims to be an integral part of student life at Dartford Grammar. The Shine School Media Awards is a national competition rewarding UK secondary schools who produce an outstanding newspaper, magazine, podcast or website. Twenty-six other schools made this year’s finals, including the City of London School, Whitgift School, Altrincham Grammar School and others. This year, the judges and committee were overwhelmed with the creativity of entries, especially considering the nationwide lockdown procedures. They said: “We have great pleasure in announcing the shortlist of schools nominated for an award at our online

ceremony on June 29th. The committee and judges have been wowed by the inventiveness, creativity and persistence of schools who have entered this year against all the odds. We have tried our hardest to do everything we can to recognise the achievements of our students this year by being every bit as innovative as they have.” The culmination of the competition would normally be a spectacular gala awards ceremony at Stationers’ Hall in the City of London but in light of the current COVID-19 situation, finalists will be recognised in an online awards ceremony on 29th June 2020. DGSChapter Sub-Editor Joseph Bullock said “The group is thrilled to have been shortlisted for the finals. It really shows the hard work and endeavour of our young writers and editors. STINGING NETTLES By Local Resident Howard Vaughan Stinging nettles are a bit of a double edged sword in a garden. They can take over and once you have them then, well, you have them but in the right spot they are a great boon for wildlife of all sorts as well as having culinary, dye and even string making uses. When I dug up my little plot on Wednesday to plant my broad beans and beetroot in I had to remove a good tangle of tuberous Nettle roots most of which I put in my compost. However, I have also planted some in a big flower pot so that they can still grow and attract insects by the dozen. They tend to flop over if grown in isolation like this so make a stick and string frame in the pot to support them as they grow but you will need to keep them watered too!

In full flower! They can get to about 1.5m high. I also have a patch of Nettles that are just fine where they are and they are already coming along just nicely and I hope to have Peacock butterfly caterpillars on them at some stage this spring. Nettlebugs will mysteriously appear and the flowers Peacock caterpillars and butterfly will attract hoverflies and some of the smaller bees.

Nettlebugs - Mark Hart Come the autumn do not cut the stems back but leave them so that Goldfinches can find the seed and small birds like Wrens and Tits will forage in the dried heads for hibernating insects.

The Dartford Warbler was first identified as a breeding bird in the UK in April 1773 when 2 specimens were shot in Bexleyheath by ornithologist, John Latham. From the 1830s sadly the bird ceased to be present in the area due to disturbance and loss of habitat as a result of urbanisation. The nearest locations where established populations can still be seen are on Sussex and Surrey heaths. Occasional winter birds turn up at Rainham marshes. 13

NORTH KENT COLLEGE AND RAF CHOIR HIT THE HEIGHTS ON BRITAIN’S GOT TALENT! North Kent College student Jack Beaney, a 2nd year Miskin actor recently received four yeses from the Britain’s Got Talent judges when the Royal Air Force Choir took part in their audition.

Simon Cowell said “It was good, really good and you had great energy”. David Walliams mentioned how “magic” it was. RASPBERRY BISCUITS By Debbie Dickinson I absolutely love this time of year and we are really lucky that we have a multitude of fruit trees and bushes in our garden. We used raspberries, picked fresh from the garden, for this recipe but you could substitute for other fruit – fresh or frozen! You’ll need: 200g Softened butter 100g Icing sugar 250g Plain flour 50g Raspberries 50g White chocolate chips (optional) What to do: Cream the butter and icing sugar together until pale and fluffy. As always, remember to scrape the sides of the bowl frequently to mix evenly! Sift in the flour and mix to combine, then stir in the raspberries and chocolate chips (if using). Pop the mixture into the fridge for 15 mins to firm up slightly. Using a spoon to help, make balls with the dough and pop on a baking tray, lined with greaseproof

paper. Bake at 160°C for 10-15 minutes until lightly golden (or baked to your liking!) Enjoy!

SOMETHING EASY YOU CAN DO TO FEEL BETTER By Clair Yates continues to be misunderstood and neglected in most health circles. It’s easier than meditation, the benefits are immediate, even a beginner can impact their nervous system dramatically in as little as 10 breaths. I’ve been teaching breath work for many years as part of my yoga classes but I would encourage everyone, even those who have no interest in yoga to consider working with their breath. Very short breathing practices of 2 minutes a couple of times a day, can make a huge difference to how we feel and to our overall health. For example, a balanced breathing practice is one you can use anytime you need balance in your life. After a chaotic journey/commute, a stressful work call, a balanced breath practice will calm you down. When you’re feeling the afternoon slump, ready to reach for a coffee a balanced breath practice will lift you up and leave you feeling energized and ready to get on with what needs doing. Like taking a sip of water throughout the day to stay hydrated, brief balancing breathing practices will help steady your nervous system, so you can respond and get things done. A calming breath practice on the other hand will always downregulate the nervous system, it can make you feel soporific and groggy so this is the technique you want to use right before bed. With the Foreign and Commonwealth Office (FCO) dropping the word ‘indefinite’ from its global no-travel advisory we believe signals the start of a much-needed recovery for the travel industry. The FCO is expected to further soften its advice over the coming weeks to permit travel via air bridges. We hope by the time the magazine goes to print this to be the case for 45 destinations with low or no Covid-19 infections. In all the uncertainty of the last 3 months one things is certain – everything can change very quickly. There is a lot of speculation about the hike in holiday prices for 2021 – judging by the beach scenes around the UK in the past few weeks there is a definite demand for sun and sea this summer. The consensus seems to be that in the immediate post-lockdown period, people will get some bargains however long term there may be new factors to prompt price hikes. Thanks to the additional flexibility from holiday providers, there has been a higher than usual level of bookings for 2021 as people lift and shift their plans by 12 months. This increase in demand may translate to higher prices during peak travel periods, and overall, we’re seeing that traditional booking patterns will not apply during the coming year. It is difficult to get over the devastation from the last 3 months however we are seeing a steady increase in new enquiries and a great appetite to travel as soon as it safe to do so. Turkey leads the short haul destinations to introduce a new tourism certification process as the country prepares to reopen to UK tourists. The Safe Tourism Certification scheme is designed to validate the implementation of high levels of health and hygiene measures at airlines, airports and other transport stations, accommodation and food and beverage facilities. The Turkish authorities have already scrapped the requirement for UK visitors to obtain a visa this summer.

HELP AND SUPPORT AT EVERY STAGE OF LIFE Personal story: Harry Warwicker the best place for Harry’s 13-year-old sister Rhianne to stay was with Sam’s sister and her family. “Rianne’s dad – my ex – couldn’t have her because he works and has health issues of his own,” explains Sam, “So that’s when my sister stepped in. She and her husband are always there to give us support when we need it, and Harry and Rhianne get on really well with their three cousins. Under normal circumstance it’s the ideal solution.” Once Harry was home from the Evelina, though, lockdown was in full swing, meaning it was a couple of weeks before Rhianne could come home. “My brother in law works in a supermarket and the fear was, if he picked something up, and passed it on to Rhianne, she might pass it on to Harry. All we could do was sit it out for two weeks apart until we were as sure as we could be that everyone was ok. It was tough to be apart but, ultimately, we knew it was the sensible thing to do for the sake of all our health – but especially Harry’s.”

One Northfleet family has experienced for themselves the vital support that ellenor offers in all sorts of circumstances – including the current pandemic - and to both children and adults.

Rhianne has her school work, but for Harry it’s things like playing with sensory toys, lots of light-touch massage to keep him stimulated – and making the most of our garden hot tub when the weather’s warm.” In these circumstances especially, it’s ellenor’s continuity of care and involvement with the family that Sam says she particularly appreciates. “It’s something we never take for granted and that we’re so grateful for,” says Sam. “We’ve all benefitted from ellenor’s services over the years and in such a wide variety of ways. We’ve got great memories from the trip we all took as a family to Disneyland Paris, where the fabulous ellenor nurses who accompanied us ensured we didn’t have anything to do except enjoy ourselves.”

Later, ellenor was there to support the family when Sam’s father was under the charity’s care, “It seemed right, somehow, that an organisation that has helped us care for Harry for so long, looked after my Dad in the last few weeks of his life, when he was in the ellenor hospice.” Afterwards, when the family needed bereavement support, Sam was able to access music therapy for Rhianne, to help her process her grandfather’s death, while Sam’s sister benefitted from ellenor’s counselling services. “Our family knows first-hand just how far-reaching ellenor’s

I’m pre-empting this with this article in hope that I can get the message to you sooner rather than later, so even if they don’t open again in the next couple of weeks, bear this in mind for when they do. For many gym-goers this re-opening will be welcomed with open arms!

You’ll be able to progress pretty quickly once you start training again, so don’t rush. Spend the first 2 or 3 run-throughs of each workout building the weights back up again. Recover between workouts (don’t try and get 6 a week in) and rebuild your strength.

KEEPING THE KIDS (AND YOU) ENTERTAINED THIS SUMMER When the schools are closed, whether during lockdown or the long summer holidays, many parents struggle to keep the kids busy. The TV and devices are usually a surefire way to keep them occupied, but this can result in an increased electricity bill. And when money’s tight, this can be a challenge in itself. Trying to keep the kids busy and not on devices is hard, but there are all sorts of cheap and cheerful activities to try instead. You never know, they might even be fun for parents too. Here are some ideas that won’t bust the budget. Tidy bedrooms and extra cash How come kids never seem to want to tidy their bedrooms even when they’re bored? Perhaps they’d be more likely to do it with an incentive, so why not suggest making a pile of things to sell via websites like eBay or Gumtree? This will encourage them to be sustainable with their old stuff, and might earn them some extra pocket money too. Keep in touch with older relatives It may have been a while since the kids have visited their grandparents and older family members. Why not encourage younger children to draw or paint a picture and older ones to write a letter? It doesn’t have to be

long and it’s fun to wait for a reply in the post – this can be a lovely way to share news and it’s better than receiving bills! Build a den This is still at the top of the list for most children, provided you don’t mind a bit of mess. All the kids need is a few blankets and their imaginations to build a cool den. If you have a garden and the weather’s good, you can get them outdoors for ages building and enjoying their creation. Picnics and chats With everything that’s happened this year with the pandemic and lockdown, it’s really important for kids to talk about how they’re feeling. This can be challenging, but having time together and enjoying each other’s company can open up space for a chat. Why not ask the kids if they fancy a picnic and have lunch outside with a blanket to sit on? When you’re chatting, try to ask open questions such as, ‘How are you feeling about X?’ rather than ones with a yes or no answer. Getting crafty Here’s a trick for craft-loving kids. Make your own glue with just flour, water and a pinch of salt. Stir

water into the flour until you get the desired gooey consistency. If it’s too thick, add a small amount of water. If it’s too thin, add a bit more flour. Finally, add a pinch of salt to prevent mould and store in a sealed container ready to use later on. Homemade quizzes If your family likes quizzes, you could get each person to come up with a round on their favourite subject and have a family fun night. Games Don’t forget the fun of a good old fashioned board game or a deck of cards. Many traditional board games were invented by ordinary people at home with their families, so if you don’t have any, you could challenge the kids to make their own? Who knows? Their creation could be the one we’ll all be playing in the future! LIFE UNDER THE STAIRS BY LOCAL RESIDENT, JANE STEVENSON Once upon a time… This month’s article nearly didn’t happen. With lockdown there is nothing going on. Even the recommended half hour exercise failed to provide me with any ideas. With shops and entertainment venues closed, no boot sales, sporting events and the cancellation of many summer festivals and fairs, I found little to comment on. Still there were things happening, albeit at a far quieter pace than before. These are set to change as lockdown eases. There will be a greater variety of businesses reopening, even those deemed to be providing non-essential items. Of course, we will have to change how we shop. Face masks, distancing, contactless payments will be the norm. We will have to adjust to this and be more patient in the future. Life goes on at Stevenson Towers, despite the virus’s best attempts to cause havoc. Trips to the vet because one cat can’t resist a fight and the other ended up as collateral damage. Hospital appointments at Darent Valley, where the staff should be given huge kudos for managing social distancing and innumerable questions, all with a smile and humour. I’ve spent some time pavement visiting friends in the area. It’s become quite usual to see people chatting, sometimes with a flask of tea or coffee, all carefully distanced. I think such visits are beneficial to our wellbeing. We are all tired of this enforced staycation, and many of us are open about our good and bad days. To quote a well worn phrase ‘we are all in

I have been chafing at the bit recently. I have run out of jigsaws to do and am stuck in the 17thC with the family tree. My efforts at providing vegetables seem to be progressing nicely, but nothing is yet ready to harvest. My cooking is improving in the loosest sense of the word – still haven’t caused a case of food poisoning yet, and Other Half has turned his hand to harvesting elderflowers and created a particularly tasty elderflower cordial. As I now have a freezer of frozen elderflowers this is obviously a new hobby for him. I’ve been thinking about taking up another interest, I just can’t decide what to do. I am incredibly ham fisted, so crafting or art is out of the question. I’m tone deaf and wouldn’t inflict my rumbling bass voice on anyone. I can’t knit or crochet, and my sewing skills are rudimentary to say the least. Any ideas from you, readers, would be gratefully appreciated. The highlight of recent weeks was a case of shingles! Gone now and hopefully it won’t return. I’d always assumed it was like mild chicken pox but have learned better. It is painful, itchy and exhausting. Too late for me, but I understand there is a shingles vaccine available for those older folks. I wish I’d known. I supposed I’m classed as officially old now; the average age for this disorder is 50 years old. It joins my failing eyesight, stiff knees and poor hearing in efforts to make me slow down. To combat such negative thoughts, I’ve decided to colour my hair blue or mauve. I’m waiting with anticipation for Amazon to drop the parcel at home. I’m told you are only as old as you feel; that depends on the weather and the day of the week as far as I’m concerned! I’ve decided as I cannot stop the aging process, I’m going to grow old disgracefully instead. Feel free to join in. As with others I’m suffering lockdown hair – I’ve got quite a mullet developing, and am in dire need of a visit to my lovely chiropodist, Pam. If I’m not careful, I shall soon be able to sleep upside down like a bat, clinging on to my resting place with the claws on my feet. I wonder how the many ladies with gel or acrylic nails are coping? Our reliance on tanning salons, nail bars and the host of other services aimed at keeping us young and beautiful could be overwhelmed once the lockdown is relaxed. I’m hoping these businesses have been able to ride out the pandemic and will open in time. Anyone hiring skips should be a millionaire by now, judging by the amount of these that have appeared in my area recently. We are all getting round to the jobs we never had time for. The plus in this is that one man’s junk is another man’s (or woman’s) treasure. I have a fine pair of planters thrown out by a neighbour, now rescued and jet washed. All they need is a coat of paint and some new greenery and they will adorn

The press offers us a rather somewhat distorted view of what happened. It can be sensationalist and inflammatory, while watering down the valid views and concerns of events which anger us. I don’t want to get into a debate about the rights and wrongs of the actions of others. Safe to say, deliberately causing injury to another living thing is unquestionably wrong. However we are reliant on the angle of the camera, the cropping of the photograph, and the words chosen by the reporter/

There are always a minority who attend such events to cause trouble – they have no interest in the cause; they grab the headlines, dilute the real message behind the protest, and generally cause mischief and mayhem – the very stuff of headlines. Hopefully we can deconstruct the words and images: do our own investigating of the facts rather than take what is shown as the gospel truth. Just some food for thought. ONLINE THEATRE ROUNDUP By Liz Dyer As another month begins, sadly we still have no theatre to look forward to - or, at the moment, much of an idea when that will change. There are still plenty of options available online, which we’ve talked about in previous issues of the magazine - but for those like me who are pining for the real thing, this month let’s take a look ahead to what’s coming up in 2021, when we can only hope that life will have returned to normal. Quick disclaimer: Because a lot of events have had to be rescheduled from this year, it’s possible that dates of some of the following shows may change. It’s best to check the Orchard’s website before you book, and to get in contact with the team if you’re unsure (but please bear in mind they’re really busy so may not be able to get back to you right away). Also, if you have tickets for any of the shows that were

meant to take place over the next couple of months but you haven’t heard from the theatre yet, please be patient - they will get in contact with you when they can. In the meantime, you can find a full list of all the shows that have already been rescheduled or cancelled on the theatre’s website. Anyway, let’s forget about 2020 for now and have a look at next year… Already in the diary for February (22nd28th) is Derren Brown’s latest show, Showman, which was supposed to take place earlier this year. Also on the calendar is Roddy Doyle’s critically acclaimed celebration of soul music, The Commitments (currently scheduled for 22nd-27th), which goes on tour five years after its hugely successful West End run.

Grease - featuring a certain Peter Andre as Teen Angel - has been rescheduled to June (21st-26th) and Friendsical, the parody musical inspired by Friends, moves to a slightly shorter run at the end of that

The rocks can be exchanged at Stephen Oliver: Studio and Gallery located at the Orchards Shopping Centre (once the gallery is open again). Here are some of the photos of their latest painted rocks.

CYRIL THE ROCK SNAKE By Nicky Dines or rehide the rock to continue the fun! No special artistic talents needed, just something to be a part of and enjoy! The rocks can often be found on the community driven rock exchange table, in the Stephen Oliver gallery in Dartford. The Wilmington group sometimes collaborates with Dartford painted rocks, well known to eachother, to create decorative rock 'lines' that the local community add to in local parks and spaces. Cyril the wonderful painted rock snake is in residence, being added to by local members of the Dartford community, both adults and children alike. He is expanding daily, spreading across the walls and bringing a little joy and fun to those who visit. People are encouraged to add some rocks of their own, to help Cyril the snake to grow! It was set up by Wilmington Painted Rocks, a group who very reguarly create painted rocks and hide in and around the local area, and further afield to spread smiles to those lucky enough to find them. Finders are encouraged to post their treasure on the relevant facebook page and to keep

Cyril has been growing little by little each day. Currently, there are about 270 rocks.

In this month’s article we look at new versions from European manufacturers for 2021 with one available from Summer 2020.

2021 BMW M5 – the new BMW M5 has lots of new black detailing, with the front grille, door mirrors, boot spoiler and reshaped bumper vents all being transformed. The M5 gets the larger grille and LED front and rear lights that were applied to the regular 5 Series as part of its recent facelift, and the distinctive, L-shaped daytime running lights that are an option on that car are fitted as standard. Five new paint colours and a new 20in alloy wheel design complete the list of exterior tweaks. As for the interior, a 12.3in infotainment screen replaces the old 10.25in unit, and is allied to a faster operating system, Apple CarPlay and Android Auto smartphone mirroring. It comes with a 4.4-litre twinturbocharged V8, which produces 592bhp in the ‘standard’ form that’s offered in some

markets, and 616bhp in the M5 Competition spec we get here in the UK. Available from this Autumn prices start from £98,095.

2021 Citroën C4 family car – this is the new Citroën C4 which demonstrates the French car maker’s design flair. It has super-slim daytime running lights are set high in the nose, while the pumped-up wheelarches and sloped roofline combine to give it a coupé-SUV look in profile. From the rear, a gently angled tailgate, a small rear spoiler and an oversized bumper that juts out behind the car only enhance this impression. The new C4 replaces both the C4 Cactus and the C4 hatchback. There are plenty of mattblack surfaces inside the new C4 and its digital dashboard looks simple and uncluttered. The range is expected to include a turbocharged 1.2-litre three-cylinder turbo petrols and 1.5-litre four-cylinder diesels, with a electric version too. It will be available from Spring 2021 with prices expected to start from around £23,000.

2021 Seat Ateca SUV – Seat has decided it’s time to give the Ateca a refresh. On the outside, it gets a deeper front grille, chunkier bumpers and full LED lights front and rear. There are new Xperience and Xperience Lux trims for those who prefer their SUVs to look a bit more rugged; these versions have black bumpers and aluminium-coloured lower valences and side mouldings. Interior changes include a chunkier and shapelier steering wheel, new seat materials and matte rather than shiny silver surrounds to highlight the dashboard, centre console and air vents. The 1.0-litre turbocharged petrol engine has been tweaked to be more efficient as well as the 1.5-litre turbocharged petrol. The 1.6 TDI diesel engine has been replaced with a 113bhp 2.0-litre with lower emissions. The latest active safety technology has been added to the Ateca, including a driver distraction monitor that sends an audible warning if the driver has taken both hands off the steering wheel for more than 15 seconds. Available from Summer 2020 prices will be expected to start from around £23,500.

DARTFORD TEAM HELPS CHILDREN RECEIVE FREE BREAKFASTS AT HOME AS SOME FAMILIES EXPERIENCE FOOD INSECURITY DURING COVID-19 LOCKDOWN Breakfast, to give them the fuel they need for their morning lessons. Since schools closed due to Covid-19, however, the charity has adapted its delivery model, with help from Amazon, to ensure that children from its partner schools can continue to enjoy their Magic Breakfast at home. Guided by its partner schools, and with generous support from food suppliers (Arla, Heinz, Kellogg’s, Morrisons, New York Bakery Co, Quaker Oats UK), Magic Breakfast has been able to deliver take home breakfast packs to schools or alternative delivery sites during lockdown. School staff have then been organising for these packs to be collected by families or arranging deliveries to families’ doors. Three quarters of a million healthy breakfasts are set for delivery to doorsteps of thousands of children across the UK, supported by the team at Amazon in Dartford as part of an expanded partnership with Magic Breakfast. Breakfast packs containing food supplies from Arla, Heinz, Kellogg’s, Morrisons, New York Bakery Co and Quaker Oats UK will be delivered for free directly to children’s homes by Amazon. New figures released by the Food Foundation have highlighted the growing issue of child hunger during COVID-191. Parcels of healthy breakfast food delivered by the local Amazon Delivery Station team have been arriving on the doorsteps of thousands of children across the UK, thanks to an expanded partnership between Magic Breakfast and Amazon. The team at Amazon’s delivery station in Dartford will support the delivery of the parcels of breakfast food through Amazon Logistics to the homes of children across the UK. Between 11th – 22nd May, more than 32,000 breakfasts were delivered to more than 2,000 homes in the South of England and London. During this period, each child received packs containing two weeks’ worth of Magic Breakfast food, either via their schools, or via an Amazon delivery. The children receiving these meals can normally have a free breakfast at school, provided by Magic

Kerry-Anne Lawlor, Country Director of Amazon Logistics, said: “We are delighted to continue our long-standing support of Magic Breakfast by delivering breakfast parcels to the doorsteps of thousands of children during this difficult time, ensuring they have a healthy start to the day.” To help Magic Breakfast reach more children at risk of hunger under lockdown, Amazon, a long-standing supporter of Magic Breakfast, has stepped in to help with its warehousing and logistics expertise. Since the partnership began in 2016, Amazon has helped Magic Breakfast provide over 1.5 million breakfasts to thousands of children across the UK. In a time when hunger is a reality faced by many, Amazon is enabling Magic Breakfast to reach thousands of vulnerable children with a healthy breakfast – children who can no longer access breakfast provision at school and whose families may be finding it difficult to provide food under lockdown. A very big thank you to Amazon”. The Executive Headteacher of a Magic Breakfast partner school said: “Thank you so much for this valuable support you are offering to our families.
