Cafe Rio operates more than 20 Caf� Rio Mexican Grill full-service restaurant locations mostly in Utah, including several in the Salt Lake City area. The chain offers traditional Tex-Mex fare, such as burritos, enchiladas, and tacos, as well as a rotating selection of daily specials. In addition to dining, the restaurants offer to-go service for those who want to enjoy their meals at home. Steve and Patricia Stanley started the business in 1997. Former Burger King president Bob Nilsen purchased Cafe Rio in 2004 with backing from private equity firm Saunders Karp & Megrue (which later merged with Apax Partners).
